Manual harvesting
The olives are exclusively hand-picked and stored in ventilated 18 kg crates to preserve their integrity.
Extraction within 6 hours
A maximum of six hours passes from harvesting to extraction, minimizing fruit oxidation.
Controlled temperature
Processing takes place at a temperature below 23°C to preserve aromas, polyphenols, and organoleptic characteristics.
Natural decantation
The oil is not subjected to invasive filtration but allowed to decant naturally.
Constant absence of oxygen
Storage takes place at a controlled temperature and in the absence of oxygen to preserve freshness and stability over time.

Riserva ORO is produced exclusively from the Provenzale (Peranzana), a historic variety of Alto Tavoliere delle Puglie.
According to tradition, it was introduced to the area around 1700 and is still considered one of the most appreciated cultivars by experts for its balance and elegance.
Its productive yield is naturally limited.
From each harvest, we obtain less oil but a higher concentration of aromas, polyphenols, and sensory quality.

From field to bottle
The olives are harvested in our olive groves in Capitanata and immediately transferred to the oil mill.
After cold extraction, the oil is stored in stainless steel tanks at controlled temperature and in the constant absence of oxygen until packaging.
