From field to bottle
Provenzale (Peranzana) is a historic cultivar of the Alto Tavoliere delle Puglie.
According to tradition, it was introduced to the area around 1700 by the French. Even today, the presence of centuries-old olive trees testifies to the strong bond with this land.
The olives are harvested directly from the tree, transported in ventilated crates, and processed in our mill within 24 hours.
The production process includes:
• Washing
• Crushing
• Malaxation
• Centrifugation
• Cold extraction
Subsequently, the oil is stored in stainless steel tanks at controlled temperatures and allowed to decant naturally before bottling.
