Chicken Pizzaiola

Difficulty: Easy Time: 45 minutes Serves: 4 people
Ingredients:
- 400g chicken breast
- 200g of tomato pulp
- 50g of black olives
- 1 tablespoon salted capers
- EVO oil from Le Fascine oil mill to taste
- Oregano to taste
- 00 flour to taste
- Sale qb
- Pepper to taste
Preparation:
- Cut the chicken into strips that are not too small.
- Salt them, pepper them and flour them.
- In a pan with high edges, heat 2 tablespoons of Le Fascine Frantoio EVO oil and brown the chicken.
- When the chicken is well browned, add the tomato pulp, season with salt and pepper and leave to cook on a low heat for 20 minutes.
- Meanwhile, slice the black olives.
- After 20 minutes, add the sliced black olives, capers and a sprinkling of oregano to the chicken.
- Let it rest for a few minutes with the lid closed and the flame off before serving.
