Orecchiette with turnip tops and EVO oil

Serves: 3 people

Ingredients for fresh orecchiette:

  • 300g of warm water
  • 200g of ground durum wheat semolina
  • Sale up to qb

Ingredients for the dressing:

  • 1kg of turnip tops
  • 50g of breadcrumbs
  • 1 clove of garlic
  • 3 anchovy fillets in oil
  • 50g of EVO Oil Frantoio Le Fascine
  • Sale up to qb

Preparation for the orecchiette:

  1. Pour the ground durum wheat flour onto a pastry board and make a well.
  2. Add a pinch of salt and warm water.
  3. Work with your fingers and handle the dough until it forms a soft and elastic ball. This will take about 10 minutes.
  4. Let it rest for 15 minutes, covering the dough with a tea towel.
  5. Once the resting time has elapsed, cut off a small piece and leave the remaining part covered with the tea towel.
  6. Form a strip of dough and use the pastry cutter to cut it into pieces of about 1cm.
  7. Shape small shells using a smooth-bladed knife and then turn them over.
  8. Continue the process until you have used all the dough: the fresh Apulian orecchiette are ready to be seasoned!

Preparation for the dressing:

  1. Place a pot of salted water on the stove and bring to the boil.
  2. To clean the turnip tops, you need to remove the outer leaves and use only those inside along with the flowers, as they are much more tender. Wash thoroughly under running water to remove any grains of soil. Drain and set aside.
  3. When the water in the pot starts to boil, add the turnip tops. After 5 minutes, add the orecchiette and cook for another 5 minutes.
  4. Meanwhile, add the breadcrumbs to a pan and stir over medium heat, until golden and set aside.
  5. In another pan add oil, crushed garlic and anchovies until they melt. At the end of cooking remove the garlic.
  6. Add the turnip tops and orecchiette to the soffritto, mixing thoroughly. Adjust to taste. Plate and add the breadcrumbs and a drizzle of EVO Oil Frantoio Le Fascine, which will add value to your tasty orecchiette!

Tip: If you prefer a stronger flavor, you can add ground chili pepper to the dressing.
