Beans and pumpkin

Difficulty: Easy Time: about 15 minutes Servings: 4 people   

Ingredients:

  • 400g of broad beans
  • 1000g of pumpkin
  • 1 red onion
  • 100ml EVO oil Le Fascine mill
  • parsley to taste
  • chili pepper to taste
  • salt and pepper to taste
  • 200g homemade bread

Preparation:

  1. Soak the beans the night before. Remove the nose (i.e. the hardest part of the skin).
  2. Clean and cut the pumpkin into coarse pieces.
  3. Clean and chop the red onion. In a pan, preferably terracotta, boil the broad beans with plenty of water and a little salt, until cooked through. In another pan, put the EVO oil frantoio Le Fascine , the red onion and the chopped pumpkin, cover and stew for about 15 minutes.
  4. Once cooked, add the beans to the pumpkin and let them flavour for a few minutes, over a low heat, serve in terracotta pans with homemade bread croutons, a drizzle of raw oil and chopped parsley.
