Cous cous with vegetables

Difficulty: Easy Time: 30 minutes Serves: 4 people
Ingredients:
- 250g of couscous
- 1 red pepper
- 1 yellow pepper
- 5 tablespoons of tomato pulp
- 1 eggplant
- 1 courgette
- EVO oil from Le Fascine oil mill to taste
- Sale qb
- Pepper to taste
Preparation:
- Prepare the couscous following the instructions on the package.
- Salt it in a pan with the tomato pulp, add salt, pepper and leave to cool.
- Meanwhile, clean, cut and grill the aubergine, courgette and peppers.
- Once everything has cooled, add the couscous to the vegetables and season with plenty of Frantoio Le Fascine EVO oil before serving.
