Cous cous with vegetables

Difficulty: Easy Time: 30 minutes Serves: 4 people     

Ingredients:

  • 250g of couscous
  • 1 red pepper
  • 1 yellow pepper
  • 5 tablespoons of tomato pulp
  • 1 eggplant
  • 1 courgette
  • EVO oil from Le Fascine oil mill to taste
  • Sale qb
  • Pepper to taste

Preparation:

  1. Prepare the couscous following the instructions on the package.
  2. Salt it in a pan with the tomato pulp, add salt, pepper and leave to cool.
  3. Meanwhile, clean, cut and grill the aubergine, courgette and peppers.
  4. Once everything has cooled, add the couscous to the vegetables and season with plenty of Frantoio Le Fascine EVO oil before serving.
